21 Day Fix

Compared to Whole 30, 21 Day Fix is a breeze! The fact that I could eat portions of wild rice, oatmeal, beans, and low-fat cheese was AMAZING. Sunday

Sunday is the most important day of my week. If I don't get organized and get things done on Sunday, I feel like my whole week is thrown off! Between laundry, mass, lesson planning and sometimes traveling back home, I feel like Sunday is anything but a day of rest. Most importantly, Sunday is my grocery shopping and meal prepping day. Having breakfast, lunch and a couple dinners ready makes Monday through Friday so much easier. I try to plan out a menu, screen shot ingredients from Pinterest and get to work!  This week for my lunches I made pork chops, mashed sweet potatoes, oven baked broccoli and a garden salad.  I'll throw this in my lunch box with a pear or apple and a coconut flavored LaCroix and I'm all set! Teacher life is so different from office life, I'm so envious of Erik's hour long lunch breaks. Easy Shredded Chicken

Crock-pots are one of the greatest inventions of all time. They make things so tender and flavorful. I have been experimenting with crock-pot recipes lately; I really enjoy making roasts and soups, but this week I was craving some good ol' fashion Tex-Mex.  I love shredded chicken because it can be used in such a variety of ways and it is a nice lean meat!  Ingredients : 1 lb boneless sk inless chicken breast 1 1/4 cups of chicken broth 1 10 oz can of Rotel 1 packet of taco seasoning (I like Old El Paso) Directions: 1. Lightly spray the bottom of your crock pot with Pam (or use a crockpot liner) and place chicken breast on bottom. 2. In a small bowl mix Rotel, taco seasoning and chicken broth together. Pour on top of chicken. 3. Cover and cook on High for 4 hours or Low for 8 hours. 4. Using two forks, pull apart and shred chicken breast. 5. Put shredded chicken on tacos, a salad, slider rolls or in enchiladas!...

Whole30

"Strength shows not only in the ability to persist, but the ability to start over." After a summer filled with travel, romance, and adventure, I am ready to return to routine and schedule! It's time to get back to showing this strong body of mine how much I love it!  I began Day 1 of the Whole30 yesterday. I have read this book before, but went through it again to remind myself of the truths I already know, but have let slip the past few weeks.  I took a picture of my book and calendar, Instagrammed it and tagged the author, Melissa Hartwig, in my caption. I asked her for a shoutout and she gave me one! She is great about replying on social media. I just adore her. Bottom comment! She knows me now ;) A big rule in Whole30 is you cannot weigh yourself. For someone like me who lives and dies by the number on the scale, this will be a challenge. I'm excited to share "non-scale" victories, meal plans and more over the next month.  ...

Whole Foods Finds

I hardly ever go to Whole Foods, mainly because I live off of a teachers salary, and because there isn't one close to me. There were a few items I had been searching for but couldn't find at my local grocery stores. Sure enough, Whole Foods carries them. There is one near my boyfriends house so I made him go with me and holy paleo heaven! I could have spent hours in there.  I have been searching high and low for Malk. It's the only almond milk with just almonds, water, and Himalayan salt. Nothing else. Other almond milks have all kinds of ingredients that I can't even pronounce. I was also in need of some Kerrygold's Butter... And then grabbed some grass-fed ground bison, chicken thighs, bacon, and pasture raised eggs. Cutest egg carton of all time. I loved everything about my Whole Foods shopping finds. If I lived near one, I am fairly certain half my paycheck would go there. 

Nature's Beautiful Food

Eating clean is gorgeous. I once had a trainer tell me to "eat the rainbow". Every color should be represented in our daily diets! Red, orange, yellow, green, blue, purple: find it and eat it! Pork chop, avocado, salad Ahi Tuna cabbage salad from Del Frisco's Grille (ask for no noodles) Prepped meals are beautiful too!

I've gotten such positive feedback from my last post! I cannot express how happy the texts, messages, and Facebook comments made me! What a great community I have surrounding me! I have had a lot of requests to post a clean eating grocery list. There are a ton you can find on Pinterest or in any paleo book you buy. Here are just the basic things I get on my weekly shopping trip. **Keep in mind with meat, poultry and seafood: look for grass-fed, free-range, or wild-caught. I've been in a kind of blah place all of February. Then March hit and I feel like I've gotten my gusto back! I am logging my food in a journal this week to show to my trainer on Friday (yikes) and he is going to set me up with a day to day meal plan. I have been frustrated with my weight not budging so he is adding some in some cardio, taking away any wine/beer/alcohol, and tweaking what times I eat. A summer body does not come easily for this girl! Meal Prep: Week two

Meal prep week two: I was so encouraged after a successful week of meal planning and preparing, I knew I couldn't go back to not doing it! Only a slight variation in the meals I made this week.. What I brought to work: Lunch: Grilled lemon pepper chicken Turkey meatball wrapped in bacon Mashed sweet potato Sauteed yellow squash ribbons Broccoli Asparagus Snack:  Cherry Tomatoes and Avocado with Balsamic  I also brought almonds for my 10:30 snack, I am constantly eating throughout the day! #hungrygirl

Meal Prep: School is back in full swing and I couldn't be happier! Teaching is one of the great loves of my life and I am so fortunate everyday to pursue my passion. However, there have been some long twelve hour work days the past few weeks, which I am sure any working woman can relate too. Coming home drained of all my energy, the last thing I want to do is cook dinner and prepare my lunch for the following day. This Sunday I decided to cook and prepare EVERY meal from breakfast to lunch to dinner for Monday through Friday. Two hours later, my task was complete. Chocolate Raspberry & Strawberry Protein Smoothie

Ingredients : 1/4 cup raspberries 1/4 cup strawberries 1 cup unsweetened coconut milk Handful of spinach Scoop of chocolate protein powder 1/2 cup crushed ice It has been so hot outside all I crave are ice cold lunches and dinners! No more hot ovens and stoves in this house for awhile.  While some people are completely fruit free on their 21 day sugar detox, I have decided to eliminate all fruits except berries. Berries are included in the paleo diet and have incredible amounts of fiber, vitamins, minerals, antioxidants, and phytonutrients (which prevent disease). Berries fit perfectly into my healthy lifestyle.   Directions: 1. Put all ingredients into blender, press liquify/ice crush/blend until smooth. About as easy as it comes! Chicken Fijita Kabobs

Ingredients : 4 chicken breasts (cut into cubes) 1 red bell pepper 1 orange bell pepper 1 red onion Marinade: 2 tbsp olive oil 1 tbsp lime juice 1 tsp chili powder 1 tsp cumin 1/2 tsp garlic powder 1/2 tsp dried oregano  1/4 tsp pepper 1/4 tsp red pepper flakes Directions: 1. Mix chili powder, cumin, garlic powder, dried oregano, pepper, and red pepper fakes into a small bowl. Set aside. 2. Cut chicken breast into large cubed pieces. Place in a large bowl, pour in 1 tbsp olive oil, 1 tbsp fresh lime juice, followed by 1/2 of the spices mixed in Step 1. Hand toss until all chicken is throughly coated. Cover bowl with plastic wrap and place in fridge. 3. Cut bell peppers and red onion into large cubed pieces. Place in a large bowl, pour in 1 tbsp olive oil, fresh lime juice, and the remaining spice mix. Hand toss until vegetables are throughly coated. Cover with plastic wrap and place in fridge. 4. Summer Veggie Salad

Summer Veggie Salad   Ingredients: 1 can of corn 2 roma tomatoes, diced 1 cucumber, diced 1 avocado, diced 1/4 red onion, diced 2 tbsp cilantro 1/3 cup feta cheese 3 tbsp apple cider vinegar 1 tsp garlic powder Salt and pepper Directions 1. Drain can of corn and place in a medium sized bowl. Dice roma tomatoes, cucumber, avocado, red onion, and cilantro. Add into medium bowl. 2. Crumble feta cheese on top, add garlic powder, apple cider vinegar, salt and pepper. 3. Mix together and refrigerate. Perfect side next to tilapia and quinoa!
