Paleo Breakfast Casserole
Ingredients : 1 sweet potato 1 lb turkey breakfast sausage 10 eggs 1/2 white onion, diced 2 cloves garlic, minced 2 tablespoons chopped fresh chives 1/4 cup chopped fresh basil 2 cups chopped spinach 1/2 teaspoon salt 1 teaspoon black pepper 12 cherry tomatoes, halved This recipe is a combination of my two favorite paleo experts: PaleOMG and 21 Day Sugar Detox by Diane Sanfilippo. I love having a hearty breakfast that is satisfying and can be packed up in advance for mornings on the go (aka every morning). Women at work always compliment how amazing it smells and several have asked for the recipe! Directions : 1. Preheat oven to 400 degrees. 2. Wash and pat dry sweet potato, cover in coconut oil and lightly sprinkle with sea salt. Place in oven for 20-25 mins. 3.
