Gluten Free Zucchini Pizza Crust Ingredients: 4 cups grated then chopped fresh zucchini ½ cup finely grated Mozzarella 5 T almond meal  3 T finely grated Parmesan  1 tsp. oregano  ½ tsp. garlic powder  pinch of salt  1 egg, beaten Directions Preheat oven to 450 F.  Using a food processor, grate four cups of zucchini (two medium size or one large zucchini). Change out the blade in processor and chop. Grated Chopped Scoop all the zucchini into a bowl and microwave for five minutes. Place all the cooked zucchini into a kitchen towel and set in a colander. Allow it to drain until it is cool enough to handle. When cool, wring out as much water as possible from the zucchini. This is a very important step, get all the water out! In a bowl, mix strained zucchini, mozzarella, parmesan, oregano, egg, almond meal, garlic powder and salt together. When mixture is consistent, scoop into two balls and place on pizza stone. Wit...

My Mini Chalkboard

DIY Mini Chalkboard Materials: Framed Mirror Chalkboard Paint Paint brush Painters tape I have been wanting to make a framed chalkboard for awhile now, every weekend I promise myself I am going to craft, but then I never do. Fortunately, I have the entire week of Thanksgiving off and finally decided to create this adorable decoration. I went to Hobby Lobby today and to my happy surprise, all mirrors were 50% off! This one was $69.99 and I got it for $34.99. Such a steal. I had read online a few different ways to paint a mirror with chalkboard paint, some said to gently sand it with steel wool, but I decided to forgo that step. I cleaned the glass with Windex and allowed it to fully dry. I then lined the inside of the mirror with painters tape. Be sure to tape it off well!  My mom has an entire chalkboard wall at the top of her stairwell and had plenty of paint left over that I used. My advice- MIX IT WELL! It must be the nat...

Pumpkin Roll Ingredients: 1 cup sugar 1/2 cup flour 3 eggs 1/2 teaspoon baking soda 3/4 teaspoon cinnamon 2/3 cup canned pumpkin 8 ounces softened cream cheese 3 tablespoons softened butter 1 cup powered sugar 1 teaspoon vanilla With just a few days left in November, I only have a couple more "everything-pumpkin-flavored" recipes to share before they become "everything-peppermint-flavored". Pumpkin Roll is my favorite Thanksgiving dessert and I couldn't wait to share this festive treat. Directions Preheat oven to 350 F. Mix together sugar, flour, eggs, baking soda, cinnamon and pumpkin. Line cookie sheet with foil and spray with nonstick cooking spray. Spread mixture evenly on cookie sheet and bake for 15 minutes. Remove from oven and turn on to a towel immediately. Spaghetti Squash & Tomato Bake Ingredients: 1 Spaghetti Squash 1 Heirloom Tomato Garlic Powder Onion Powder Dried Parsley Dried Basil  1/4 cup shredded mozzarella  This was honestly the easiest thing I have made so far! I literally threw it together while chatting with my roomie and watching Real Housewives of Beverly Hills. Directions: Preheat oven to 425 degrees. Prepare one medium/large spaghetti squash. After squash has been prepared, slice an heirloom tomato and gather spices. Place 3 cups of spaghetti squash in the bottom of a glass dish. Lay the slices of tomato over squash, then dash garlic powder, onion powder, dried parsley and dried basil over tomatoes. Put the rest of the spaghetti squash on top, add mozzarella, and a bit more dried parsley and basil. Put in the oven at 325 degrees for 15-20 minutes. Paleo Pumpkin & Chocolate Chip Cookies Ingredients: 1 cup almond meal/flour 1 tsp pumpkin pie spice 1 tsp baking soda 1/3 cup chocolate chips 1/4 cup chopped walnuts 1/4 cup pumpkin puree 1/2 cup almond butter 1/2 local organic honey 1 tsp vanilla extract Preheat the oven to 350 degrees and line a cookie sheet with parchment paper. Combine wet ingredients together in one bowl and dry ingredients in another. With a mixer, slowly add together until thoroughly combined. With a spoon scoop dough onto parchment paper. Bake for 12-15 minutes  Remove from baking sheet 2 minutes cooling and transfer to cooling wrack.  Everything in this is so delish!

Mason Jar Salads Aren't they cute?! Sunday is always my big grocery shopping and cooking day. I love having meals prepared for the work week, and these Mason Jar Salads couldn't be more convenient! It was so easy to prepare once I finally decided what ingredients I wanted in each jar. I stored all the extra veggies so I can easily throw more salads together later on this week! Ingredients : 1/2 cup ground turkey 1/4 cup sauteed onion & bell pepper 5 cherry tomatoes Shredded carrots Romaine lettuce Ingredients : 1/4 cup quinoa Strawberries Kale Black berries Slices almonds Dried cranberries Ingredients: Black Beans Corn 1/4 cup quinoa Spinach Roasted sweet potatoes  Avocado Enjoy! Paleo Spaghetti Squash & Meatball Bites Ingredients: 1 Spaghetti Squash 1 lb ground turkey 1 cup spaghetti sauce 3 egg whites 1 tbsp dried parsley 1 tbsp dried thyme 1 tbsp dried basil salt and pepper, to taste Directions: I have tried and failed at cooking many spaghetti squash in my day, and this is what I have found to be the most successful way to prepare one: Preheat oven to 425 degrees Stab several holes all around the spaghetti squash with a knife or fork Place the squash in the microwave for 4-5 minutes Take out squash and allow it to cool When cool, cut the squash lengthwise Remove seeds and extra threads until it is completely clean Brush lightly with olive oil and sprinkle with salt and pepper The hardest part of the process...       8. Southwestern Grilled Sweet Potato Salad Ingredients : 4 medium sweet potatoes, peeled and cut into slices 1 tablespoon olive oil Salt and pepper 1 ear sweet corn 1  can black beans, rinsed and drained 1 red pepper, diced 2 green onions, chopped 1/2 cup chopped cilantro 2 avocados, pit and skin removed, chopped Juice of 2 limes 2 tablespoons seasoned rice vinegar 2 tablespoons apple cider vinegar 2 teaspoons cumin 1 teaspoon ground coriander  In a large bowl, toss sweet potato slices with olive oil. Season with salt and pepper. Place sweet potatoes on grill over medium heat. Cook 8-10 minutes on each side. When sweet potatoes are close to being done, toss corn onto the grill for 3-4 minutes, rotating to slightly char kernels.   Cube the sweet potatoes, remove corn from the cob.Stir in black beans, red bell pepper, green onion, cilantro, and avocado. Paleo Pumpkin Banana Muffins Ingredients: 1 cup almond flour 1 tsp baking powder 1 tsp baking soda 1/8 tsp salt 1/2 tsp pumpkin pie spice 1 tsp cinnamon  2 eggs 3/4 cup pumpkin 1 mashed banana 1 tsp vanilla extract 2 tbsp honey 1/2 tsp Stevia 1/8 cup chopped cinnamon almonds Preheat oven to 350 degrees.
