  • 1/2 cup flour
  • 3 eggs
  • 1/2 teaspoon baking soda

With just a few days left in November, I only have a couple more "everything-pumpkin-flavored" recipes to share before they become "everything-peppermint-flavored". Pumpkin Roll is my favorite Thanksgiving dessert and I couldn't wait to share this festive treat.

Directions

Preheat oven to 350 F. Mix together sugar, flour, eggs, baking soda, cinnamon and pumpkin. Line cookie sheet with foil and spray with nonstick cooking spray. Spread mixture evenly on cookie sheet and bake for 15 minutes.

Remove from oven and turn on to a towel immediately. Roll into a long log an let cool.
This is the most intimidating part..
but the roll is more forgiving than you'd think!
Allow to cool.

While cake is cooling, make filling: Mix together 8 ounces softened cream cheese, 3 tablespoons butter at room temperature, 1 teaspoon vanilla and 1 cup powdered sugar.

Unroll completely cooled cake. Spread filling onto cake.

Roll cake again and place seam-side down. For presentation, trim off both ends of the roll and lightly sprinkle with powered sugar.

Chill for 3 hours to let cake set.
Enjoy!
