Spaghetti Squash & Tomato Bake


Ingredients:

  • 1 Spaghetti Squash
  • 1 Heirloom Tomato
  • Garlic Powder
  • Onion Powder
  • Dried Parsley
  • Dried Basil 
  • 1/4 cup shredded mozzarella 
This was honestly the easiest thing I have made so far! I literally threw it together while chatting with my roomie and watching Real Housewives of Beverly Hills.

Directions:

Preheat oven to 425 degrees. Prepare one medium/large spaghetti squash.

After squash has been prepared, slice an heirloom tomato and gather spices. Place 3 cups of spaghetti squash in the bottom of a glass dish. Lay the slices of tomato over squash, then dash garlic powder, onion powder, dried parsley and dried basil over tomatoes. Put the rest of the spaghetti squash on top, add mozzarella, and a bit more dried parsley and basil.

Put in the oven at 325 degrees for 15-20 minutes.

This weekend was incredibly family centered and I loved every minute of it. My mom, Paul, and I went to the Chinese Lantern Festival on Friday and had a blast!

If you are in Dallas, I would recommend checking out this festival. It is such a fun and different event to attend in this city. It's held in Fair Park until January!
